My keto quest has taken me to the land of delicieux chocolate chip cookies. It’s my second invention, and with 3.8 net carbs per cookie, I’m really excited to share it! This shall be short and sweet.
These are your tools. You’ve got your 1/2 cup, 1/4 cup, 1/2 teaspoon and 1/4 teaspoon. Get your bowl and mixer. Grease your pan. Turn the oven to 350 degrees. Let’s boogie.
Mix these in a large bowl first: 1/2 cup of oats, 1/4 cup of soy flour, 1/2 cup chopped pecans, 1/4 teaspoon salt and 1/2 teaspoon baking powder.
After that is all mixed together, add these yummy bits: 2 Tbsp. coconut milk, 1 large egg, 2 Tbsp. brown sugar, 1/4 cup dark chocolate chips and (not pictured) 1/2 cup natural peanut butter and 2 Tbsp. butter.
Here we go from this to….
Once it is in dough form, roll into 1 inch balls. It should make 23-25 balls. Now, squash ‘em. We want flat cookies. Pop them in the warm oven for 9 minutes. Let them cool for 5.

1/4 cup dark chocolate chips
2 Tbsp. brown sugar
Each cookie has around 88 calories, 6.5 grams of fat, 3 grams of protein and 3.8 grams of net carbs.
Suggestions: 1/4 cup dried cranberries or other dried fruit. You could also use almond flour instead of soy, but I haven’t been able to find any!
